Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup Nutella hazelnut spread
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt
In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy
Beat in the egg and vanilla extract until well combined
Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined
Scoop tablespoon-sized portions of dough and roll them into balls
Place them on the prepared baking sheet, spacing them about 2 inches apart
Use a fork to gently flatten each dough ball, creating a crisscross pattern on top
Bake in the preheated oven for about 8-10 minutes, or until the cookies are set around the edges
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Once the cookies are completely cooled, spread about a teaspoon of Nutella on the bottom side of one cookie and then sandwich it with another cookie, bottom sides together
Repeat this process for the remaining cookies
