Ingredients:
- 1 cup of barley
- 2 cups of water
- 1 cup of mixed red berries strawberries, raspberries, and cranberries
- 1/2 cup of Greek yogurt
- 2 tablespoons of honey
- 1/4 cup of chopped nuts e

- , almonds or walnuts
- A pinch of cinnamon
- Fresh mint leaves for garnish optional
Instructions:
Run cold water over the barley and let it drain
Bring 2 cups of water to a boil in a saucepan
Then add the rinsed barley
Turn down the heat, cover, and let it simmer for 25 to 30 minutes, or until the barley is soft and the water is gone
While you wait, mash up half of the mixed redberries in a bowl and set it aside
Take the barley off the heat when it's done cooking and let it cool down a bit
Add the mashed redberries to the barley that has already been cooked
Put Greek yogurt on top of the red berry and barley mixture in serving bowls
Pour honey over the top, and then add chopped nuts and a pinch of cinnamon
If you want, you can add fresh mint leaves as a garnish
Warm up with this Red Berry and Barley Porridge with Yogurt and enjoy it!
