Ingredients:
- 1 lb fingerling potatoes, halved lengthwise
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 2 tbsp olive oil
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
- 2 tbsp chopped fresh dill
- 2 tbsp lemon juice
- 2 tbsp red wine vinegar
- 1/4 cup crumbled feta cheese
Instructions:
Preheat the oven to 400F 200C
Toss the halved fingerling potatoes and asparagus pieces with olive oil, salt, and pepper on a baking sheet
Roast in the preheated oven for 20-25 minutes, or until potatoes are tender and lightly browned
In a small bowl, whisk together lemon juice, red wine vinegar, parsley, and dill to make the dressing
Transfer the roasted potatoes and asparagus to a large bowl
Drizzle the dressing over the vegetables and toss gently to coat
Sprinkle crumbled feta cheese over the salad before serving
